My husband loves mangoes. He loves mangoes as much as I love chocolate. So when he finds a mango recipe, he wants to try it. Mangoes are fleshy tropical fruit with a large pit in the middle, much like a plum. They are a light orange-yellow in color when ripe, and the flesh is generally sweet and juicy. Mangoes can be used in a lot of different dishes, and pair well with other tropical fruit. The original recipe that we found for mango banana bread was in the SOS Sport Solar Oven Cookbook. We have adapted it to make it a gluten free mango banana loaf. Don’t need gluten-free? Just revert back to regular flour. This bread is a heavy loaf bread, and not too sweet. It was baked in the Sport Solar Oven.
