One dish pies, such as Amazing Coconut pie, are so easy to make in a solar oven there is no reason to miss dessert. This homemade coconut pie can be whipped up in just a few minutes. Just stir everything together in a large bowl, and pour it into a pie plate. It makes its own soft crust. But don’t be fooled by the top of the pie. Be sure to give it a full cooking time so that the top is golden brown and the bottom crust is firm.
Amazing Coconut Pie

Ingredients
- 2 cups milk
- ¼ cup white sugar
- 4 eggs
- 1 cup sweetened flaked coconut
- 1 tsp vanilla extract
- ¼ cup butter, softened
- ½ cup baking mix
Instructions
- Pre-heat the solar oven while preparing the recipe.
- Spray a 9" pie plate with PAM.
- In a large bowl, combine the milk, eggs, vanilla, butter, and sugar. Cream until smooth. Add the baking mix, and mix well. Finally, stir in the coconut.
- Pour into the prepared pie plate.
- Bake uncovered in the hot solar oven approximately 2 - 2½ hours until the edges are browned and a toothpick comes out clean.
Notes
The exact amount of time needed to bake depends on the type of solar oven, how hot the oven gets, the outside weather, and how diligent the cook is to keep the solar oven focused to the sun. It took my pie 2½ hours to bake on a sunny but 60 degree day, with a high oven temp of 340 degrees.
