This morning when I looked out, it was partly cloudy and it looked like rain. “Good” I thought, “we sure need some rain”. So I didn’t plan on putting out my solar oven. But about noon, I looked out again, and the sun was hot and bright. So there I was, with a perfect cooking day, and nothing to cook. A quick look in the pantry and right there were there ingredients for one of our favorite quick desserts. Although the name says CAKE, this really is more of a cobbler type dessert. And it is so very easy to make.
Cherry Pineapple Dump Cake
1 can cherry pie filling
1 can crushed pineapple (I used a big can because I like lots of pineapple. But a small can will do)
1/2 to 1 cup chopped walnuts or pecans
1 yellow or white cake mix (dry)
1 stick of butter or margarine (cut into pieces)
Place the solar oven out to begin preheating. Dump the cherry pie filling and pineapple, juice and all, into a pan. Add the nuts. Top with the dry cake mix. Place butter pieces on the top. Bake in the solar oven for 2 – 3 hours.
Cherry Pineapple Dump Cake is an easy dessert to bake in the solar oven. It spoons out into a bowl, much like a soft cobbler. Try it with vanilla ice cream. Delicious!

The pan is a glass cake pan that is about 8 X 12. I like it because it fits in my solar oven really nice. Thanks for stopping by.

Lordy, Lordy, I forgot all about dump cakes! Used to make them all the time when the girls were small. We loved them — so easy and so good! Thanks for the reminder and the recipe. I wouldn’t have thought of the combination and, yet, now I just have to have one! Have a great day!
