Remember that white chocolate from last week’s White Chocolate Bread Pudding? Well, I had some left and wanted to finish using it. I took a look in the pantry and saw a jar full of roasted peanuts left over from something else. And inspiration struck!!
Melting chocolate in the solar oven is very easy. Just think about chocolate in your car on a hot day, or how just the heat from your hands can melt a piece of candy. But just like in a microwave oven, the chocolate in the solar oven holds its shape and you can’t tell the chocolate has melted until you stir it. Then you realize that the chocolate is hot and smooth and creamy. Perfect for dipping strawberries, pretzels, and peanuts!
Chocolate Peanut Clusters
- 1 lb white chocolate, broken into pieces
- 1/2 lb semi-sweet chocolate, broken into pieces (or chocolate chips)
- 16 oz jar of roasted peanuts
Place the chocolate pieces into a graniteware pot. Place the uncovered pot into a pre-heated solar oven. Heat for about 45 – 60 minutes. Stir about half-way through. When the chocolate is totally melted, stir the chocolates together and stir in the peanuts. Mix well. Drop the mixture by teaspoons onto waxed paper and let cool. What could be easier than that?
Thanks for solar cooking with Sunshine On My Shoulder. I would love to hear if you made this recipe or your favorite candy recipe, so please leave me a message in the comment box

Well, now, I don’t know. I think this is one of those recipes that really should be tasted by any number of people to make sure that it’s safe and that it is exactly what you say. I think, maybe, four or five pieces for each commentor, FedExed overnight, would do the trick; don’t you? I would definitely give you a review. It’s funny, but I just happened to have seen a bag of peanuts on the shelf in the kitchen, this morning. Guess what going to do! Thanks for sharing and come visit when you can.

Yes, I think that FedExing them to several people for comment is a great idea. Unfortunately, I took them to work and my co-workers ate all of them. One man sure did enjoy them – he had several — but he was really confused as to how they could be made in the solar oven. He said, ” I don’t understand how these could be made in your solar oven. Wouldn’t the chocolate just melt?” 🙂
