Easy Bar Cookies are perfect for solar oven cooking. Why? Because there are only 4 ingredients. The ingredients are readily available. And the cookies can be stirred up anywhere and baked in your solar oven.
Solar cooking doesn’t need to be complicated. In fact, the easier it is the better – especially if you want to carry your solar oven with you to the beach, to the soccer field, or camping.

I found an old newspaper clipping of this recipe lurking in the back of my recipe notebook. Long before we had the internet and Pinterest to help us find new and exciting recipes, we would clip delicious recipes from newspaper columns and magazines. And then we would promptly stuff them into recipe binders and boxes – sometimes never to be seen again. Yea, pretty much the way my Pinterest board works now. 🙂
But the minute I saw it again, I knew that this recipe would be perfect for solar cooking. It is easy to make and easy to bake.

The day started out hot, bright, and sunny, but then the clouds started rolling in and out, so it took my cookies longer to bake than I had expected. How Long Does It Take To Cook In a Solar Oven
Easy Bar Cookies
- 1 box yellow or white cake mix
- 2 eggs, beaten
- 1 stick melted butter or margarine
- 1½ - 2 cups chocolate chips
- Pre-heat the solar oven while mixing up the ingredients.
- In a mixing bowl, add the cake mix, the 2 beaten eggs, and the melted butter. Mix well. The mixture will be thick and gooey.
- Add the chocolate chips and mix well.
- Spread into the mixture into a 9"x13" solar safe baking pan sprayed with cooking spray. Make sure the pan fits into your solar oven.
- Place into the pre-heated solar oven.
- Bake until the cookie bar is brown and cooked through, approximately 1 - 2 hours.
- Remove from the solar oven. When cooled, cut into squares.
Notes: The time it takes to bake will depend on several factors, including the type of oven being used and the weather. My bars baked for 2 hours at a temperature that varied between 225F (107C) and 300F(149C) depending on the clouds that day.
