We went to Winco Foods yesterday. They have a very large bulk food section. As I was wandering around looking at all of the different choices, I came across a very simple Granola recipe that was perfect for the solar oven. Of course, a lot of different things can be put into a granola, and I couldn’t resist adding a few little extras of my own. After the granola was finished, I packaged it up into small 1 cup serving size bags. Perfect for lunch boxes, hiking, and snacks. I think I’ll take this to a staff meeting at work on Monday. I know they will enjoy it.
Easy Solar Granola
- 7 cups rolled oats
- 1 – 1 ½ cups chopped nuts ( I used almonds)
- 1 cup wheat germ
- 2 cups sunflower seeds
- 3 – 4 cups raisins & dried cranberries (amounts depend on your tastes)
- 1 cup honey
- 1 cup vegetable oil
- 1 cup brown sugar
- 4 tsp vanilla
Pre-heat the solar oven while preparing the recipe. Combine the oats, nuts, wheat germ, and sunflower seeds in a large bowl. Combine the honey, oil, brown sugar, and vanilla. Heat the mixture until the brown sugar is dissolved. Do not boil. Stir to mix well. Although I used the microwave oven, this mixture can easily be heated in the solar oven. Pour the hot honey syrup over the oats mixture and stir well. Pour out into a pan and bake in the solar oven for about 45 minutes to an hour. This makes a large amount and I had to divide it into three batches. Remove from the solar oven and let cool. Stir in the raisins and cranberries.
