Lemon Pie is one of our favorite summer desserts. Using the whole lemon gives it an extra dimension of lemony flavor.
Here is a simple lemon pie that you can quickly stir up for dessert on your busiest days. Since it does not take much monitoring, baking this lemon pie in your solar oven will free you up for more important things – like making relaxing on the patio with your favorite book.
I baked my pie in the All American Sun Oven. The amount of time it take to cook in a solar oven depends on how how the oven gets and that depends on several factors including the type of solar oven used, the weather, and how focused the solar oven is to the sun. Easy Lemon Pie
- 1 whole large lemon
- 4 eggs
- 1 1/2 cup sugar
- 1 tsp vanilla
- 1 stick of melted butter
- 1 unbaked pie shell
Pre-heat the solar oven while preparing the ingredients.
Cut the lemon into large chunks. Discard the seeds. (I also discard the peel, but that is only preference.) Place the lemon in a blender or food processor. Give it a good whiz to break it down. Add each of the other ingredients and give it another whiz to stir everything together. Pour into the unbaked pie shell. Bake in solar oven until pie is firm and golden brown. I baked this pie for three hours in the solar oven. (In the kitchen, bake at 350° for 40 minutes.)
