An easy cheesy potato casserole suitable for potlucks, holiday dinners, and family suppers. This can be made in advance, and cooked the next day, or frozen for future use.

Serves: 6 servings
Ingredients
1 - 1½ pounds hash brown potatoes
1 - 2 cups diced onions
salt
pepper
2 cups grated cheddar cheese
¼ cup butter or margarine, melted
1 can cream of chicken soup
½ cup milk
1 cup crushed corn flakes
Instructions
Put the solar oven out to pre-heat while preparing the recipe.
Spray a pan, suitable for solar cooking, with PAM.
Mix the hash browns, onions, salt and pepper to taste, and cheddar cheese in the pan. Mix well.
Mix the cream of chicken soup, melted butter, and milk in a bowl. Stir to mix well.
Add the soup/milk mixture to the hash browns and stir to mix well.
Cover the pan with the lid and place into the pre-heated solar oven.
About an hour before taking the pan out of the oven, top the hash browns with the crushed corn flakes. Continue cooking until the topping is brown.
