Mango Banana Bread

Ingredients
  • ½ c butter (or shortening)
  • ½ c Agave nectar (or honey)
  • 1 egg
  • 1 tsp vanilla
  • 1½ large banana
  • mango frozen chunks to equal 1 mango (or 1 mango, peeled and cubed)
  • 2 c gluten free flour
  • 1 Tbs baking powder
  • ¼ tsp salt
  • ½ t cinnamon
Instructions
  1. Pre-heat the solar oven while preparing the ingredients.
  2. In a large bowl, sift the flour, baking powder, salt, and cinnamon. Stir to mix well.
  3. In another bowl, puree or mash the frozen mango until smooth. Add the banana and mash until the mixture is smooth and creamy.
  4. Cream the butter with the sugar until smooth. Add the egg and vanilla and mix well. Gradually add the flour mixture, alternating with the fruit mixture until all is incorporated into the batter.
  5. Pour into 2 greased and floured bread pans. This is a heavy, thick batter so smooth the top to make it pretty. Bake uncovered in the solar oven for about 1½ hours or until the bread pulls away from the sides of the pan.
  6. Actual Cooking time will vary depending on the type of solar cooker, the weather, and the amount of food being cooked. For best results, and the shortest cooking time, keep the oven pointed directly into the sun.
