Easy Bar Cookies are perfect for solar cooking because there are only 4 ingredients; the ingredients are readily available, and they can be stirred up anywhere; and of course, they can also be baked in the kitchen oven too.

Ingredients
1 box yellow or white cake mix
2 eggs, beaten
1 stick melted butter or margarine
1½ - 2 cups chocolate chips
Instructions
Pre-heat the solar oven while mixing up the ingredients.
In a mixing bowl, add the cake mix, the 2 beaten eggs, and the melted butter. Mix well. The mixture will be thick and gooey.
Add the chocolate chips and mix well.
Spread into the mixture into a 9"x13" solar safe baking pan sprayed with cooking spray. Make sure the pan fits into your solar oven.
Place into the pre-heated solar oven.
Bake until the cookie bar is brown and cooked through, approximately 1 - 2 hours.
Remove from the solar oven. When cooled, cut into squares.
Notes
Variations: Add ½ cup of chopped walnuts or pecans. Use a different flavor cake mix and different flavored chips.
Notes: The time it takes to bake will depend on several factors, including the type of oven being used and the weather. My bars baked for 2 hours at a temperature that varied between 225F (107C) and 300F(149C) depending on the clouds that day.
