Country sausage can be cooked in a solar oven. Just combine ground pork and your favorite spices. Make it mild or wild. You decide.
We love a good country sausage for breakfast. But sausage always seemed like one of those “mystery” meats, that just “was”. Sausage came in little round tubes. I didn’t question how it was made or what was in it — until recently. By happenstance, I came upon a recipe for homemade sausage. And OMG! It wasn’t hard. I played around with the spices in the basic recipe until the seasonings were just right for us. You may like yours mild ( like the basic recipe), or hot & spicy (like my version), or somewhere in between. So give it a try and adjust the spices to your own taste.
Spicy Homemade Country Sausage
Combine ground pork with your favorite blend of spices Mix thoroughly until the spices are evenly distributed through the meat. Cover and let sit in the fridge for several hours to let the spices blend. Then cook a small amount and taste. Add more spices, if needed. And repeat the previous steps until you discover your “perfect” sausage blend. (Don’t forget to write it down.)
The sausage can now be cooked any way that you like – stove top, microwave, or solar oven.
Homemade sausage baked in the Solar oven
Roll out the sausage mixture between layers of waxed paper, then use a cookie cutter, or jar lid to cut circles. (Or just make small patties.) Layer the sausage patties into a baking pan, with parchment paper between the layers.
Bake in a pre-heated solar oven for about 1 to 1 1/2 hours.
But I only partially cook my sausage in the solar oven. Take the patties out of the oven when they are about 1/2 done. Cool and place layers of sausage, separated by parchment or freezer paper, into the freezer. When frozen, place into a freezer bag. Take out pieces as needed. Finish cooking sausage in the solar oven, in the skillet, or in the microwave. (By only partially cooking the sausage, they are not over-cooked when heated.)
I cooked my sausage for about an hour in the All American Sun Oven.
- 16 oz (1 pound) ground pork
- 1 tsp (1½ tsp) salt
- ½ tsp (1 tsp) cayenne pepper
- ¼ tsp (1 tsp) rubbed sage
- ¼ tsp (1 /2 tsp) fresh course ground black pepper
- ¼ tsp (1/2 tsp) crushed red pepper flakes
- ¼ tsp (1/2 tsp) coriander
- Combine all the spices in a small bowl. Mix well to blend.
- Put half of the ground pork into a large bowl. Add half of the spices.
- Mix thoroughly until the spices are evenly distributed thorough the meat.
- Do the same with the remaining half pound.
- Combine the meat mixture and mix again until all the spices are distributed.
- Cover and let sit in the refrigerator for several hours or overnight to let the spices blend into the meat.
- Cook a small amount of sausage and taste.
- Increase the spices if desired until you find your "perfect" sausage blend.
- When your sausage is the way you like it, roll or pat out the sausage mixture between layers of wax paper.
- Using a cookie cutter, biscuit cutter, or jar ring, cut out circles from the meat. Or just pat out small patties.
- Put into a solar safe baking dish.
- Place into a pre-heated solar oven.
- Cook until the sausage about 1 hour until the sausage is brown and cooked all the way through.
Variation #1: Sage - leave out the cayenne pepper and red pepper flakes; add ½ tsp dried parsley.
Variation #2: Maple - Leave out the cayenne pepper, red pepper flakes, black pepper, and sage; add 3 TBSP maple syrup.
You can cook on the stove top or solar oven.
Sausage freezes well. Partially cook. When cool, layer between wax paper and put into the freezer. When frozen, place into a ziplock freezer bag. When needed, remove the sausage and heat on the stove top or in the microwave until hot. It will finish cooking while it is heating.

Do you cook your (par-cooked) sausage from frozen? Or do you have to thaw first? I’m thinking easy camping breakfast, and my big chest cooler keeps my frozen stuff frozen.

I like to pre-cook my sausage and then freeze it. I cut/shape it into patties, put on a big pan, and bake in a low oven (maybe 300 degrees) or solar oven. I have also pressed out the sausage into a big cookie sheet and baked it and then cut into squares. When cooked about 1/2 – 3/4 done, take off of the pan, drain off the grease, and cool. Then layer them on a wax paper covered cookie sheet and place in the freezer until frozen. You can even stack them with wax paper in between the layers. When they are frozen, take them out and put into a freezer bag.(This is the way I freeze almost everything) When ready to cook, take out as many as needed, and pop them into the low or med high microwave, oven, or skillet for a few minutes. You can thaw if you want too, but I just cook them from frozen. This would work great for camping because the frozen patties will travel well, and you won’t have to deal with as much grease at the campsite. If I don’t precook the sausage before freezing, I usually partially thaw the frozen patties prior to cooking or start out the frozen sausage over a low heat to gently thaw and then turn up the heat to finish cooking.
