Mango Banana Bread Recipe for Solar Oven Cooking

Mango Banana Bread

My husband loves mangoes. He loves mangoes as much as I love chocolate. So when he finds a mango recipe, he wants to try it. Mangoes are fleshy tropical fruit with a large pit in the middle, much like a plum. They are a light orange-yellow in color when ripe, and the flesh is generally sweet and juicy. Mangoes can be used in a lot of different dishes, and pair well with other tropical fruit.  The original recipe that we found for mango banana bread was in the SOS Sport Solar Oven Cookbook.  We have adapted it to make it a gluten free mango banana loaf.  Don’t need gluten-free? Just revert back to regular flour. This bread is a heavy loaf bread, and not too sweet. It was baked in the Sport Solar Oven.Mango Banana bread loaf

    Thank you so much for bringing your sunshine to Fridays Blog Booster Party #26. I have never heard of solar ovens before. Sounds interesting. We have a lot of roof solar to generate electricity in Australia. I will have to search for an oven.

    I also love anything mango and gluten free so your recipe sounds awesome, I will have to try that one.

      Hello Kathleen, Solar cooking seems to be a well kept secret. But the word is slowly getting out. I’m sure that you will be able to find a solar oven online, but in the meantime, try making one. A homemade solar oven is easy to make from simple materials you probably already have on hand and is a really great thing to know in case of emergencies.
