Pineapple Coconut Poke Cake
Need a light, cool dessert for a summer party? Here is a quick and easy cake that fits the bill. Pineapple Coconut Poke Cake is just as perfect for a potluck as it is for a summer evening with friends.
Pineapple Coconut Poke Cake
- 1 yellow cake mix
- 1 large can of crushed pineapple, drained ( I like extra pineapple, so use an additional small can) reserve the juice
- 1 14 oz can sweetened condensed milk
- 8 oz Whipped Topping
- 1 cup grated coconut
Pre-heat the solar oven while preparing the recipe.
Prepare the cake mix as directed on the package, except substitute the juice for the water. Mix in half of the pineapple and half of the coconut into the batter. Pour the batter into a greased 9×13 cake pan. Bake in hot solar oven. My cake baked for 2 hours at an oven temperature of 280º. It was a bright sunny 85º day.
When cake is finished, poke holes in the hot cake with a fork all over the top. Pour the sweetened condensed milk evenly over the top of the cake. Let the cake cool completely. Then spread the whipped topping evenly over the top. Finish by sprinkling the remaining pineapple and coconut evenly over the top. Refrigerate until ready to serve.
