Pies are so easy to bake and taste so good. This pie can be made from ingredients that are usually already in the pantry. I used a pre-made frozen deep dish pie shell that can be picked up in almost any grocery store, and re-crimped the edges . But you can certainly use your own homemade crust.
I used an All American Sun Oven to bake my Pineapple Pie. Even though I live in Arizona, there are few absolutely perfect cooking days. The time it takes to cook in a solar oven varies depending on how hot the solar oven gets, which depends on the type of solar oven being used, the weather, and how focused the oven is to the sun. The cloudier it is, of course, the longer it takes to cook in a solar oven. And there is definitely a point where you cannot cook. This day was typical for this time of year — partly cloudy, partly sunny – more sunny than cloudy, but the clouds kept coming and going. So I expected my pie to take a bit longer to cook than it would on a perfectly sunny day in July, but I still expected it to cook. And cook it did. After 3 hours in the solar oven, I was rewarded with the really pretty, golden brown pineapple pie.
Crushed Pineapple Pie
- 2 eggs
- 1 1/2 cups sugar
- 1/2 cup butter, melted
- 3 TBSP flour
- 1tsp vanilla
- 1 cup crushed pineapple, with juice
- 1 unbaked pie shell
Pre-heat the solar oven. In a mixing bowl, beat the two eggs. Add the melted butter, sugar, vanilla, and flour. Stir together. Add the pineapple and juice and mix until the sugar is dissolved. Pour into an unbaked pie shell. Pour into the unbaked pie shell. Place into the hot solar oven. Bake uncovered until the pie golden brown and a toothpick comes out clean.
(Bake 50 minutes at 350° in a regular oven)
