Rancho Fajitas Beef & Beans

Rancho Fajita Beef & Beans

Tex-Mex flavors of chili’s, peppers, and onions are very popular in the Southwestern United States.  I make this easy version of fajitas, using a mix of spices, but you can also use a prepackaged fajita seasoning mix.

Rancho Fajita Beef

  • 1 – 2 lbs beef sirloin roast, cubed
  • 1 – 2 Tbsp Rancho Fajita Seasoning Mix
  • 1/8 cup water
  • 1 onion, sliced
  • 1 bell pepper, cleaned and sliced thin (opt)
  • juice of 1 lime
  • flour tortillas

Pre-heat solar oven while preparing ingredients.

Cube sirloin roast into small cubes and put into granitware pan.  Add spices to taste and mix to cover.  Add water.

Cook in solar oven until meat is almost done and tender.  Add the onions and bell peppers to pan and finish cooking for about an hour.  When done, squeeze juice of lime over beef and onions.  Eat with flour tortillas.Rancho Fajita Beef with onions ( I usually add bell peppers, but  I didn’t have any on this day.)

 

 

 

Rancho Beans

  • 1 cup pinto beans
  • water to cover
  • 1/2 cup salsa
  • 1-2 tsp of Rancho Fajita Beef Seasoning

Place pinto beans and water to cover in granite ware pan.  (You can let this soak overnight, but I usually don’t.)

Cook beans for about 3 – 4  hours until tender.  About an hour before beans are done, add salsa and seasoning mix.  Finish cooking.

Rancho Fajita Seasoning Mix.

  • 2 Tbsp Chili Powder
  • 1 tsp coriander
  • 2 tsp sea salt
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp black pepper
  • 1/2 tsp oregano
  • 1/2 tsp cayenne pepper (opt to taste)

Combine all ingredients to taste.
