One of the best things about a pumpkin is the seeds. Roasted and salted, pumpkin seeds make a great little snack.
Last week I showed you how to bake a pumpkin in your solar oven. Baking the pumpkin in the solar oven is my favorite way to cook a pumpkin. Just put the whole thing into the solar oven. Then take a walk, read a book, play with the kids or grandkids, or watch a ballgame on TV. It is really is a no fuss way to bake a pumpkin. And when it is done, the peel comes right off. Open it up and the scoop out the insides. The seeds are ready to be washed and roasted.
Roasted Pumpkin Seeds
Roasting the seeds is next. Of course, roasting the seeds is no secret. And the technique is the same as in your oven. Pre-heat the solar oven. Wash and rinse the seeds. Put in to a pan. Add some butter and some salt. Put in to a hot solar oven and bake uncovered.
I baked my pumpkin seeds in a Sun Oven. The oven temperature reached 300 ° F and my seeds cooked for about two hours. The amount of time it takes to cook in a solar oven will depend on several factors, including the type of solar cooker you are using; the weather; and how well you keep the solar oven focused into the sun.
If too much moisture collects on the inside of the oven, just leave the top open a small amount at the top. Bake the seeds until crisp and golden brown. Then sit back and enjoy your snack.
