I have often made these little fruit kabobs to put on the grill. They go very nicely with almost everything. They are especially good on a hot summer night with grilled chicken and a salad. But we aren’t using the grill as much as we used to. Now we mainly cook in the solar oven. These kabobs turned out even prettier cooked in the solar oven because there are no burn spots. I paired these kabobs with Chili Relleño Casserole to make a light summer meal.
Solar Fruit Kabobs
- Apples (cut into chunks – I sprayed mine with a lemon juice/water mixture to keep the chunks from turning brown)
- Fresh pineapple (cut into chunks)
- Maraschino cherries
- 1/2 cup honey
- 1 Tbsp Butter, melted
- 1/4 tsp cinnamon
- Bamboo skewers
Pre-heat solar oven while preparing recipe.
Thread apples, pineapples, and cherries onto skewer. Combined melted butter, honey, and cinnamon. Baste fruit with the butter honey mixture. Place into pan. Bake in hot solar oven for 1 1/2 to 2 hours.
