One of the best parts of Thanksgiving is the pie — pumpkin pie of course. Pies are easy to bake and easy to bake in a solar oven. Yes, it does take a little longer, but the end result is worth the effort. I took my traditional pie recipe, substituted my homemadepumpkin puree from my baked pumpkin, and adjusted the milk.
Pumpkin Pie
2 eggs, slightly beaten
2 c pumpkin puree
1/2 c granulated sugar
1/4 c brown sugar
1/2 tsp salt
2 tsp pumpkin pie spice
1 2/3 c evaporated milk, undiluted (for my solar baked pie, I reduced the milk by half because liquids do not evaporate in a solar oven like they do in the kitchen.)
Unbaked pie shell
Pre-heat the solar oven while preparing the pie.
Mix in the order given. Pour into an unbaked pie shell. (The traditional recipe says to bake at 425° for 15 minutes; then at 350° for 45 minutes.)
With my solar oven was staying at about 325°, the pie took 2 hours.
Happy Thanksgiving and enjoy your solar baked Pumpkin Pie.

Hi! This looks delicious and I can’t wait to give it a try. One question: did you mean you reduced 1 2/3 c evaporated milk by half, or is the 1 2/3 c evaporated milk the total amount after it was reduced?

Hello, I am sorry for the confusion. As I re-read it now, I realize that it is a bit confusing. 1 2/3 cup evaporated milk is the original amount. And I reduced that by about half. Thanks for stopping by. Have a Happy Thanksgiving.

This looks so yummy. So glad you’ve shown this recipe — especially, because you also mention how a recipe starts out at the much higher temperature. I’ve found that it really isn’t that necessary and the end result is a wonderful pie. Wonder if that’s because the sun is heating from the top down. Just wondered what you thought.
