Solar Ranch Potatoes

Here is a very simple recipe to add some excitement to your potatoes.  I originally found this slow-cooker recipe in an old church cookbook.  But I often cooked this out on the barbeque grill.  Now I am back to slow cooking, only this time in my solar oven.Ranch Potatoes

  • Solar Ranch Potatoes
  • 2 lbs small red potatoes, quartered
  • 1/4 cup vegetable oil
  • 1 (1 oz packet) Hidden Valley Ranch Dressing mix (seasoning & salad mix), dry

Pre-heat the solar oven while preparing the potatoes.  Place the potatoes in a heavy duty, resealable bag, and add the oil.  Seal the bag and toss to coat the potatoes.  Add the dry seasoning mix, and toss again until coated.  Bake in the solar oven, covered, for 2 – 3 hours.
