It’s no secret that Rod does all of our grocery shopping. One day, he came home with a spaghetti squash. I hadn’t even thought about spaghetti squash in years, although we grew them in the garden many years ago – when we had a garden. For those unfamiliar with a spaghetti squash, when cooked, the inside of the squash pulls out into strands that look a lot like spaghetti – hence the name. The squash immediately went into the solar oven for a little solar sunbath.
SPAGHETTI SQUASH BAKED IN A SOLAR OVEN

1 fresh spaghetti squash
Wash the spaghetti squash.
Cut in half and clean out the seeds from the inside (like a pumpkin).
Place into a pan and put int a hot solar oven. Depending on the temperature of the oven, it will take several hours to bake.
When baked, the inside flesh of the spaghetti squash will pull out in strands.
Top with your favorite sauce. I used spaghetti sauce and Parmesan cheese.
