It’s January, and many people started a new diet. So let the sun shine, because I am making turkey meatballs. These meatballs fit into the Take Shape for Life (TSFL) plan and will probably fit into your diet plan too.
TSFL Solar Turkey Meatballs
- 1 lb extra lean ground turkey (I used a 20 oz pkg)
- 1 pkg of Medifast BBQ Bites – crushed fine
- 1/2 – 3/4 cup chopped green peppers
- 1/4 cup egg beaters
- Add seasonings of your choice.
I used
- 1/2 tsp onion powder
1/2 tsp garlic
1/2 tsp sea salt
1/4 tsp red pepper
1/4 tsp black pepper
(For a more traditional meatball, you may use crushed crackers, oatmeal, or other filler ingredient instead of the BBQ Bites. In addition to chopped peppers, trying adding chopped onion. And of course, a real egg can be used in the place of the egg beaters.)
Pre-heat the solar oven while preparing the meatballs.
Crush the BBQ bites fine. In a large bowl, add the ground turkey, crushed BBQ bites, and the seasonings to your taste. Mix well and add the egg beaters. Mix until the egg is incorporated into the mixture. Shape into small balls.
Place on a rack inside of a granite ware or other dark pot.
Place into a hot solar oven and bake uncovered for about 1 1/2 hours.
After cooking, my meatballs made 3 servings weighing 6 oz each (5 meatballs).
- 6 oz Turkey + eggbeaters = 1 Lean
- BBQ Bites = 1/3 medifast meal
- green pepper= 1/2 green
I served my turkey meatballs on toothpicks with a side of Walden Farms Zesty BBQ sauce.
